Carrot soup with shrimps and bacon is a perfect dish to welcome the rainy days.
1 tablespoon olive oil
1 yellow onion
1 garlic clove
7-8 medium carrots
1 liter vegetable broth
1 dl of milk
1. Heat the olive oil in a saucepan and fry the onions until they are soft.
2. Chop the carrots and add the broth to the mixture. Boil for 20-25 minutes until the carrots are soft.
3. Mix the soup with a food processor until the soup is smooth. Add the milk and taste with salt, pepper and coriander.
4. Fry the shrimp and bacon and top the soup with the mix and some coriander.
